Ingredients:

  • zucchini – 1 kg;
  • eggs – 3 pcs;
  • kefir or sour cream – 150 g;

  • baking soda – 0,5 tsp;
  • olive oil.

Preparation: Rinse and dry zucchini. Remove the tips, leaving the skin.

  2. Add eggs, sour cream or yoghurt, salt, pepper and add soda. All mix.
  3. Slowly add flour, mixing constantly. Due to the fact that zucchini under the influence of salt emits juice, you may need more flour, so adjust the amount on the eye. If necessary, drain excess liquid.
  4. Leave the dough for 10 minutes, check for salt. If necessary, salt extra. Add chopped dill.
  5. Add a drop of olive oil on the frying pan and fry pancakes on a familiar principle on both sides to the golden crust. Gently roll the pancakes so they do not fall apart.
  6. The ready-made dish can be served with sour cream or snack made of cheese and garlic.

Ingredients:

  • multicoloured sweet pepper – 450 g;
  • garlic – 6 pcs;
  • onion – 2 pcs;
  • zucchini – 3 pcs;
  • tomato sauce – 400 gr;
  • paprika – 4 tsp;
  • mustard – 1/3 cup;
  • salt, pepper, oil – to taste.

Preparation:

  1. Clean the pepper from the seeds, zucchini from the peel.
  2. Cut onions, peppers and zucchini into cubes, grind the garlic.
  3. Preheat the oil in a large frying pan. Add onions and cook for 5 minutes, stirring occasionally.
  4. Add garlic and pepper, steam for another 7 minutes.
  5. Add the tomato sauce, the rest of the ingredients. Mix all.
  6. Decrease the fire, cover, cook over low heat for 15 minutes. Remove lid, cook for 10 minutes.

Zucchini dish stuffed with chicken

Ingredients:

  • zucchini – 2 pcs;
  • chicken fillet – 1 pc;
  • tomatoes – 2 pcs;
  • Bulgarian pepper (optional) – 1 pc;
  • green onion;
  • mozzarella;
  • Greek yoghurt;
  • salt, pepper to taste;
  • olive oil.

Preparation:

  1. Wash the zucchini, cut the tips, cut it in half and remove the pulp with a spoon or knife. Salt and set aside for 20 minutes.
  2. At this time, cut chicken meat into small cubes, add salt, pepper and stew in a frying pan until ready.
  3. Grind tomatoes, peppers and green onions. Add to chicken.
  4. Grate the zucchini squash on a large grater or cut into cubes.
  5. Grate cheese.
  6. Dry the zucchini halves with napkins and place it on a greased olive oil plate.
  7. Fill the halves with the prepared filling and pour over the top with natural yoghurt.

Ingredients:

  • cauliflower – 300 g;
  • onions – 1 pc;
  • garlic – 2 pcs;
  • olive oil – 2 tsp;
  • canned tomatoes – 1 glass;
  • vegetable broth – 2 cups;
  • white canned beans – 500 g;
  • laurel leaf, spices.

Preparation:

  1. Preheat olive oil in a saucepan. Cut onion and garlic into small pieces, fry until soft.
  2. Clean zucchini, cut into cubes. Cauliflower must be divided into inflorescences.
  3. Add cabbage and zucchini to the onion-garlic mass, cook until soft.
  4. Pour the soup into a saucepan, put tomatoes, spices. Bring the liquid to boil, reduce the heat, cook for 10 minutes. Add the beans, warm-up, remove from the fire.

Zucchini caviar in crock-pot

Ingredients:

  • zucchini – 0,5 kg;
  • onions – 2 pcs;
  • carrots – 2 pcs;
  • sweet pepper – 1 pc;
  • tomato paste – 2 tsp;
  • vegetable oil – 1 tsp;
  • sugar – 1 tsp;
  • salt and pepper – to taste.

Preparation:

  1. Pour oil into a crock-pot, add the carrots and onions cut into cubes. Set to “Baking” mode for 20 minutes. Intermittently stir.
  2. Add zucchini cut in cubes, sweet and hot pepper after the signal. Stir all. Turn the “Baking” mode on again for 20 minutes.
  3. Add tomato paste, sugar, salt after the signal. Turn on “Slow cooking” mode on for 60 minutes.
  4. Cooked caviar grind in a blender.
