The perfect family dinner recipe

Every housewife, at least once a week, wonders what to cook for lunch or dinner. She wants to experiment with something new. If you have half an hour and a great desire to please your family with something new, we offer an interesting and useful recipe that will appeal to even children.


Chicken breast in the oven with lemon-mint sauce


Seasoned with salt and pepper, the chicken breast is fried to a golden crust in a frying pan and then cooked in the oven. So it retains its juiciness. And the bright taste will give it an amazing lemon-mint sauce that doesn’t need cooking. Mint, parsley, lemon, garlic and spices are mixed in a blender with olive oil. Pour over the chicken breast sauce and enjoy this unusual taste. The sauce also goes well with any other type of meat.

Ingredients:

Chicken (4 halves of chicken breast without bones and skin), 2 tbsp. of olive oil.

Lemon-mint sauce: 1 clove of garlic, 1/4 tsp. salt, 0.5 tbsp. chopped parsley, 1/3 tbsp. minced mint, 1.5 tsp. ground black pepper, juice and peel of 1 lemon, 1/3 tbsp. olive oil.


Cooking:

  1. Preheat oven to 230 °C.
  2. Heat a large frying pan over moderate heat. Add the olive oil and twist the pan to cover the bottom. Salt and pepper the smooth side of each lump. Put the seasoning side down and fry, without turning, until light brown, about 3-4 minutes.
  3. Salt and pepper the top of the chicken and flip. Fry for 1 minute on the stove, then transfer the pan to the oven and bake until the inside temperature of the breast reaches 74 °C on the meat thermometer, about 6-8 minutes. Transfer to a cutting board and let rest for 5 minutes before slicing.
  4. Sauce: Crush the garlic clove, sprinkle with salt and whisk along the side of the knife until a paste (or grate). Transfer to a blender with parsley, mint, pepper, lemon zest and juice. Grind and then slowly pour in olive oil. Pour into a small bowl and salt to taste. If desired, deglaze the pan with the sauce and serve with the chicken.

Note: this sauce is also great for steaks and pork chops.
